Gluten Grains

As some of you know, I started this journey with a diagnosis of celiac disease back in the 1980's, when it wasn't even called celiac yet, and the head of gastroenterology at the hospital had to look it up. I don't have it, but my interest in the disorder has stayed, and I've watched as it's gone from a 1 in 10,000, no one knows what it is, to 1 in 125, and Gluten Free is a huge trend.

There's no question that many people suffered needlessly for years as gluten sensitivity disorders were under diagnosed; and there's no question that there are many people today thinking being gluten free is beneficial to them when it isn't. Worse, there are many people who think they're being gluten free when they're not, and others who think they're sensitive to all gluten grains, when they're not.

Wheat - a very common allergen
Wheat 'Family' grains -
Gluten containing grains that aren't in the wheat family, and
Grains that aren't gluten containing.
